Here's a pumpkin recipe for you to try:
Makes: 6 to 8 servings
Start to Finish 25 mins 
Holiday Pumpkin Soup
ingredients


  • 2
    tablespoons finely chopped onion
  • 1/2
    teaspoon curry powder
  • 1/4
    teaspoon ground cumin
  • 1/4
    teaspoon ground coriander
  • 1/4
    teaspoon salt
  • 1
    tablespoon butter or margarine
  • 2
    15 ounce cans pumpkin
  • 2
    14 ounce cans chicken broth
  • 1
    tablespoon packed brown sugar or maple syrup (optional)
  • 1
    cup half and half, light cream or milk
  • Dairy sour cream (optional)
  • Fresh sage leaves (optional)
directions In a large saucepan, cook onion, curry powder, cumin, coriander, and salt in hot butter until onion is tender. Whisk in pumpkin, chicken broth, and brown sugar or maple syrup, if desired, until well combined. Bring mixture just to boiling; reduce heat. Stir in half and half and heat through. If desired, garnish with sour cream and sage leaves. Makes 6 to 8 servings.

    Pumpkin cookies


    Some fun cookies to try for the season. Why not try pumpkin cookies for a change? Here's one recipe that looked like it might be fun!

      Old-Fashioned Soft Pumpkin Cookies

      These cookies are something different and great for after school with a big glass of milk.
      Old-Fashioned Soft Pumpkin Cookies

      • Ingredients
      • 2 1/2 cups all-purpose flour
      • 1 teaspoon baking soda
      • 1 teaspoon baking powder
      • 1 teaspoon ground cinnamon
      • 1/2 teaspoon ground nutmeg
      • 1/2 teaspoon salt
      • 1 1/2 cups granulated sugar
      • 1/2 cup butter (1 stick), softened
      • 1 cup LIBBY'S® 100% Pure Pumpkin
      • 1 large egg
      • 1 teaspoon vanilla extract




      Directions

      PREHEAT oven to 350° F.
       Grease 
      baking sheets.Glaze (recipe follows)
      COMBINE flour, baking soda, baking powder, 
      cinnamon, nutmeg and salt in medium 
      bowl. Beat sugar and butter in large 
      mixer bowl until well blended. Beat in
       pumpkin, egg and vanilla extract 
      until smooth.  Gradually beat in
      flour mixture. Drop by rounded 
      tablespoon onto prepared baking 
      sheets. BAKE for 15 to 18 minutes or until 
      edges are firm. Cool on baking sheets
      for 2 minutes; remove to wire racks 
      to cool completely. 
      Drizzle Glaze over cookies.
      FOR GLAZE:
      COMBINE
       2 cups sifted powdered 
      sugar, 3 tablespoons milk, 1 tablespoon 
      melted butter and 1 teaspoon vanilla 
      extract in small bowl until smooth.
