Looking Forward to 2013


May I say that 2012 was a very challenging year.  
A lot was achieved and a lot was maintained 
with strength and fortitude.  
2013 
I hope reveals 
some answers to past events and 
current trends today.  I would like 
to see the political and financial picture 
in the US stabilize. Also, I would like to 
change locales for work/living if the 
opportunity presents itself, 
mostly to be closer to certain family members.
I am wishing everyone a Happy New Year and may you have good health and happiness.  Cherishing every good moment, each and every day.  Thankful to God for all His blessings.

Pumpkin Bread

Happy Thanksgiving Week!! 
Here's a Wonderful Pumpkin Bread 
Recipe to try!!
  • 4 tablespoons unsalted butter, softened, plus more for the pan
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon fine salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups sugar
  • 1/4 cup vegetable oil
  • Scant 1 cup canned pumpkin puree
  • 2 large eggs
1. Preheat the oven to 350°F. Butter a 9-inch loaf pan.
2. Whisk together the flour, salt, baking soda, baking powder, cinnamon, nutmeg, allspice, and cloves in a small bowl.
3. Beat the butter, sugar, and oil on high speed in the bowl of a stand mixer fitted with the paddle attachment, scraping down the sides and bottom of the bowl a few times, until light and fluffy, about 1 minute.
4. Add the pumpkin puree and mix until combined. Add the eggs, one at a time, and mix until just incorporated. Mixing on low speed, slowly add the flour mixture and 2/3 cup water and mix until just combined. Spread the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 1 hour to 1 hour 15 minutes. Let cool in the pan on a wire rack for 10 minutes. Remove from the pan and let cool completely.

Beef Stroganoff Recipe


Beef Stroganoff
2 pounds cubed stew meat
2 cans Condensed Mushroom Soup
1 large onion diced
2-3-4 tabls of Worcestershire
1 cup of water
8 oz of cream cheese
couple of dashes of Garlic Salt
couple dashes of Hot Paprika

In the slow cooker stir in all the ingredients, except the meat AND the Cream Cheese, together. Once combined add the meat and mix together.

Cook on Low for 8 hours. Cut up the cream cheese into cubes just before serving and turn crockpot on high. Stir the cream cheese in until all combined. You might have to put the lid back on and leave for 10 minutes.

Serve over egg noodles.

Word for the day: Thankful


Well it's early but maybe instead of a day of Thanksgiving, we should probably have a month of it!
What I am thankful today for are friends who are doing okay on the East Coast!!!! In New York!
I am thankful that the election is nearly here! I am thankful that I live in a free country where I can express myself to you! I am thankful for a beautiful day in San Diego! And thankful for another blessed day of good health!

Here's a pumpkin recipe for you to try:
Makes: 6 to 8 servings
Start to Finish 25 mins 
Holiday Pumpkin Soup
ingredients


  • 2
    tablespoons finely chopped onion
  • 1/2
    teaspoon curry powder
  • 1/4
    teaspoon ground cumin
  • 1/4
    teaspoon ground coriander
  • 1/4
    teaspoon salt
  • 1
    tablespoon butter or margarine
  • 2
    15 ounce cans pumpkin
  • 2
    14 ounce cans chicken broth
  • 1
    tablespoon packed brown sugar or maple syrup (optional)
  • 1
    cup half and half, light cream or milk
  • Dairy sour cream (optional)
  • Fresh sage leaves (optional)
directions In a large saucepan, cook onion, curry powder, cumin, coriander, and salt in hot butter until onion is tender. Whisk in pumpkin, chicken broth, and brown sugar or maple syrup, if desired, until well combined. Bring mixture just to boiling; reduce heat. Stir in half and half and heat through. If desired, garnish with sour cream and sage leaves. Makes 6 to 8 servings.
